Individual Nut
Anyone have a recipe for fried almonds (candied)?
When I was a little girl my grandmother, who was sicilian, used to make a special treat at Christmas. It consisted of blanched and fried almonds, and it seemed to have some kind of honey coating (maybe). The almonds would be stuck together in small bunches of say 6 – 10 nuts in groups. They did not fall apart when you pick them up.
I have tried to do this by blanching then frying and then getting them to stick with honey, but they just fall apart into individual nuts. Anyone who has had this treat or made it, can you help me out with the missing steps and possibly provide a real name for this?
I wonder if it was similar to this recipe…one of the comments was:
“I preferred to break the almonds apart as best I could once they had cooled, and they are definitely sticky until the coating sets completely.”
Candied Almonds
2 cups whole almonds (natural)
1/4 cup honey
2 tablespoons butter
1 cup turbinado sugar (sugar in the raw)
1 cup turbinado sugar (sugar in the raw)
Spread almonds on a shallow baking sheet.
Place in cold oven and then set oven for 350 and roast 15-20 minutes, stirring occasionally.
In a medium saucepan heat honey and butter over medium heat until boiling.
Turn down heat to medium low and simmer for 2 minutes while stirring occasionally.
Add almonds and simmer for another 2 minutes, stirring occasionally.
Transfer almonds with a slotted spoon onto a greased baking sheet and spread into a single layer and let cool slightly.
In a bowl, toss almonds in sugar to coat.
